In OSX the preferences.txt file is unmodifiable because it is reset on
Processing's start.

This occurs when Processing is CLOSED, the file is edited, and Processing
is restarted (not editing with Processing open).

The problem is mentioned in this thread by other users and is reproducible
on multiple machines:

Steps to recreate:
- Close Processing
- Edit /Library/Processing/Preferences.txt
- Change background color to #000000
- Save File
- Open Processing
- Reload file with reverted value
